Spicy chicken hash under 300 cals!

I don't know about anyone else but after the weekend, Monday is a day I often feel like something really light and wholesome for dinner. Its also the day when you have left overs from Sundays roast. This recipe combines the two.  

If you want it to stay within 300 cals then exercise portion control on the chicken, oil and potatoes and go large on the veg!

This was really good, if I say so myself!!

Ingredients:

Half a large carrot
Half a large courgette (zucchini) 
Quarter of a small head of cauliflower
2-3 chunks of left over roasted sweet potato
1/3 cup of roast chicken breast skin removed
1 clove garlic
1-2 teaspoons curry powder
1 teaspoon cumin seeds
Half a hot green chilli
half teaspoon of turmeric
juice of half a lime or lemon


Method:

Shred the carrot, courgette and cauliflower. You can do this in a food processor or using a grater.

Place in a large non stick frying pan with the oil and mix thoroughly. Fry on a medium heat for about 5 minutes, stirring periodically. 

When the veg has softened, crush the garlic into the pan and add the finely chopped chilli. Also add the curry powder and turmeric. 

Grind the cumin seeds in a pestle and mortar and add those as well. Season with salt and pepper. The veg may start to stick to the pan at this point so if it does, add a splash of water and continue cooking for another 2 minutes. 

Then add the potatoes and shredded chicken breast. Mash the ingredients into the pan with a non metallic potato masher (Don't want to ruin the non-stick!).

Cook the hash together until its piping hot and starting to turn brown where it meets the pan. Squeeze in the lemon or lime, mix through and serve!






Variations: You can really use any veg or left overs that you want in this. Normal potatoes would be good and other types of roasted meat but of course this will alter the calorie content. Basic rule though, if you add loads of veg to make a massive portion and limit the meat, potatoes and oil, you will end up with a hearty filling meal that's light and has tonnes of vitamins. Yum!!!
