Ingredients:
1 medium sized sweet potato chopped into approx 1 inch cubed pieces.
half bulb of garlic no need to peel.
2 tablespoons olive oil.
herbs of choice fresh or dried.
sea salt
Method.
Preheat oven to 180 degrees C (fan oven).
toss cubes of potatoe with oil, chopped herbs, salt and seperated cloves of garlic.
