Diets make you misrable! Make a chocolate cake thats good for you!

Just try not to eat too much of it!!

I hate January! Everyone is depressed, spent up and on a diet. You cant so much as look at any type of food that's not riveta in an office without people tutting disapprovingly and commenting on the calories before proceeding to tell you everything they have had to eat that day down to the milk in their tea and that they've joined the gym and they are definitely going to go this time!

Sound familiar? We've all done it, I'm really not criticising as I used to be one of the worst offenders. These days though, counting every calorie and telling the world and his dog about it just makes me feel worse. Sure, I overate in December (who didn't?) but rather than diet, i now make sure i eat things that will fuel my body and give me energy and above all get some exercise. 

To me the choice of equation is simple:

Good Food + Exercise = Happy, lose weight, bags of energy

Hardly any food + No Exercise = Grumpy, hungry, bad tempered, cravings, no energy

It's a no-brainer! But hey that's just me and I do admit that I am ever so slightly more obsessed by food than your average person and also probably just a touch grumpier when i get hungry too. Just a little of course! ;)

Some alternative icing (frosting) ideas are:

Healthy Salted Caramel: blend  15 small dates that have been softened for a few hours in water and then drained with half a can of full fat coconut milk until really smooth and add a pinch of sea salt. If you want it really smooth pass it through a sieve.

 Dairy Free Chocolate Ganash: Over a bowl of boiled water melt equal parts dark chocolate and coconut milk together and pour over the cake for a thin chocolate coating. If it is too bitter add a splash or two of maple syrup.

Both are yummy and although they do contain fat, it is much lower in saturates and they contain little refined sugar. The coconut milk also contains protein which is great fuel for a workout and the dates contain fiber (more if not sieved) so there's some good stuff in there. More importantly there are no nasty additives like you would find in 'healthy' cake ranges so in my book they are a lot better for you. Enjoy after a run or a gym session  or just have a really tiny slice (yeah right!) and absolutely no guilt.
