Ingredients:
2 medium sized cougettes
half a lemon
a few sprigs of fresh mint
Salt and pepper.
1 teaspoon of olive oil
Method:
Really easy: slice courgettes into thin strips on a diagonal to get long thin strips around 2 mm thick.
Rub the oil into the courgettes until all are evenly but sparingly coated. Grill on a hot griddle pan or BBQ for around 4 mins on each side.
Serve warm with the lemon squeezed over and the mint finely chopped and sprinkled on top. combine all ingredients and serve.Labels: light, savoury side dishes, tapas style dishes
