
Of all the gooey, chocoholic, buttery, creamy cakes I make there are always one or two favorites that people ask for again and again. To my surprise, this wholesome date and banana loaf is one of them.
Its not because I don't like this cake that I'm surprised. I love it and am really proud of this recipe. Its easy to make, fairly foolproof and because of the absence of refined sugar you don't get the nasty insulin spike you get from most of my cakes. No guilt! what could be better.
I think the reason I'm always surprised that this cake is such a hit is that its a 'grown up' cake.
I think that somewhere in my subconscious, my childhood self still sees anything with dates, dried fruit and no icing as boring, cakes my mum and dad ate just didn't interest me. I really didn't know what I was missing. Luckily my taste buds have matured and i can appreciate a home made fruit cake far more than a mini roll. However it doesn't make my heart race like cakes with butter cream do. I'm in the minority though as its always a hit with everyone else. I made this cake for my friend the other week when I asked him what cake he wanted this was the one he requested. Its so moist and sticky people don't believe its sugar free. It also keeps for over a week because of the moisture so its a great way of using up old bananas.
